Pumpkin Soup




Ingredients

2 cup Pumpkin (kaddu) diced
2 tbsp Butter
2 bay leaves
6 cloves garlic
1 tsp black pepper
1 tbsp Lemon juice
Fresh cream 1/2 cup
Salt to taste

Method

Heat butter in a pressure cooker, add bay leaves,diced pumpkin, sauté for half a minute.

Add 2.5 cups water and pressure cook until one whistle is given out. Strain excess stock and reserve. Puree the vegetables, once it cools down.

Now heat butter in a pan and add black pepper powder to it. Now add the puree and cook for 5-8 mins, if you find it thick you can add the stock(water) or a little milk. Add salt and lemon juice. Turn of the flame.

Soup is ready... Garnish with fresh cream.
