Strawberry Pie





Ingredients:   

Crust
1 cup whole wheat flour/atta
½ cup all purpose flour/maida
¼ cup olive oil
⅓ cup water at room temperature
½ tsp salt or as required
1 tsp vanilla essence

Strawberry Sauce
Finely chopped strawberries- 1/2 cups
Sugar- 1/2cup
Lemon Juice- ½ tsp
Lemon Zest- ½ tsp

For Filling:
Fresh Strawberries- Cut in Half

Crust
Sieve or mix all the dry ingredients together - whole wheat flour, all purpose flour and salt.

Add the olive oil and with your fingers mix the oil in the flour evenly to get a breadcrumb consistency. It gives a flaky texture to the crust. the whole mixture should look like breadcrumbs.
Add water and just bind the whole mixture together. form a dough but don't knead. 
Cover it with a cling film and keep in the fridge for about 30minutes
Now roll the dough till it is ½ inch thick, and place it gently on a greased pan and press it towards the bottom and the edges.

Bake the crust in a pre heated oven for 15 mins or till the crust has become golden and crisp.

Strawberry Sauce:
In a non-stick pan, add strawberries, sugar and lemon juice. Cook this until the sugar melts along with the strawberries, for about 8 to 10 minutes. Let it cool down, then  puree it to form fresh strawberry sauce.

Serving:
Cut strawberries in to two and line them in the pie crust, and top with strawberry sauce. Serve Chilled.
